gonna go with chewy. I never understood the craze over bacon though. its good, but it ain't that damn good. i've always preferred breakfast sausage over it.

There's a happy medium somewhere. Caramelizing the meat and rendering the fat adds some nice flavor, but cooking all of the water out concentrates the salt used to cure it to unpleasant levels.
