But in testing it I found out that after an update in like October, the Switch straight up can't do HDMI>dvi. It just won't work. The switch just keeps its display on its screen on the dock and doesn't show up on the monitor

It probably needs a DHCP signal to work which DVI won't send back to the Switch.
