It's basically 1, with slightly improved combat.

Other than that, if you played the first 2, you already know what you're getting into.

Okay, now with that out of the way, it's much closer to DS1 than 2 except for the fact that you have a base of operations much like DS2 where you buy stuff and level up. You've got lots of freedom as far as builds but like with past games you're going to want to specialize. There are also a lot of sidequests with NPCs, so as you fill out your base make sure to check back and chat often.

EDIT: If you're worried about having trouble, start with a strength build. There's a very good elemental axe early in the game that will carry you through most of the game. It's the Deep Battle Axe if you need to look up a guide on how to find it.

My biggest tip is to be patient. As long as you're aware of your surroundings, you should be fine for the most part.

The biggest thing that's new with 3 is the FP meter (blue bar).

Spells no longer have a set amount of "ammo" and instead all use a set amount of your FP per use. Your FP replenishes like health instead of stamina, and uses an Ashen Estus Flask, or resting at a bonfire.

Weapons also have special attacks that use FP, so it's not just for spellcasters.

If you want it an easy start pick Knight. Having a 100% PHY shield on hand is always a safe approach.

Theres a way to get an additional estus sip right at the starting area. Theres a trick to getting on the roof. Search on YouTube for how to do it. Its nice because you also get some equipment that increases your soul gain.

Twinks a plenty in the second area, so get ready for that.

Dont bother trying to kill dragons early on. Despite previous games the rewards are not good.
