Hamill was somehow the least cartoony Joker.

He is not deep or complex at all, that's why in the comics he has no canonical background/origin story. He is evil because he can.

That doesn't make him uninteresting however.

He just wants to watch the world burn, nothing deep or complex about that.

I'm pretty sure his canonical story is that he falls into chemicals, although I suppose they reset these universes p frequently and that might not be true of his current incarnation

He would make his mark, if not on this tree, then on that wall; if not with teeth and claws, then with penknife and razor.

Do you think that's what makes him appealing?

Pretty much, he is the polar opposite of Batman.

Batman plans ahead, does things carefully and calculated and could be seen as "order".

Joker does things indiscriminately, there is no idea or plan, he could be seen as "chaos".

Joker on his own would be boring, but against Batman he becomes an interesting character.

Now that's false. Joker is a genius mastermind. He knows what he's doing and not some dumb person going with the flow and seeing things out.

It is still canon, or at least a variation of it.
We got at least three different Jokers now.

Depends on the writer or even just that comic/episode/movie.

Joker is usually either total chaos with no real plan, just executing random genius ideas that no one can follow, or a brilliant lunatic that has an absurd amount of random plans with tons of contingencies and ideas where he's not really random chaos, but more a very unpredictable dangerous wildcard.

To the point that it doesn't matter if plan A fails at any point, because he can just resort to plan L, or plan A.392 that accounts for the failure of plan A and uses his failure in his own favor.

He's not very deep as a character alone usually, but his actions, especially if being written in the second way along with his way to manipulate the people and situation can be deep.

The deepest part about him is probably the fact that he can be anything (the writer) wants and it still makes sense.

If that makes sense.
