Though, if you are still unsure as to whether or not you want to pursue a career in academia or industry, a postdoc is a safe next choice since it keeps the doors to both open.

Postdoc 1 - Albert Einstein doing metabolomics, ~55k/yr

Postdoc 2 - Harvard doing gut microbiome research, ~55k/yr

Postdoc 3 - Johns Hopkins doing cardiovascular research, ~55k/yr

Industry - Health economics outcomes research, ~145k/yr

I know postdoc is safer, but I can't see myself fighting for funding and writing manuscripts for the next 20 years

You say small company, how small is it? Does there seem to be job security? I know a lot of start ups over the past few years have been offering data science positions like crazy, but those are really risky since they could implode at any moment.

As far as the postdocs, you can't narrow down your choices to a single one? Long term career wise, if you were to stay in academia, which post doc would provide you with the most (depending on your situation, this could be technique development, high publication rate, or networking)?
