how do you counteract that without digital editing post-production

Superimposing a graphic over the top of it and hope it doesn't look too noticeable. That's the only way I know. Most film makers put a green screen on any monitors that will be in-shot, so they can easily add in whatever they want afterwards.

Change the refresh rate to be even with how many frames you record in.
