Like BSB and Vicar Amelia are cool. Gascogine is good outside of his arena. Cleric Beast, Shadows of Yharnam, Rom and almost all of the early chalice dungeon bosses are not great. IDK, I remember liking it more before, maybe DS3 spoiled me.

Dark Souls 3 has the best bosses in the Soulsborne series, but I liked the ones in Bloodborne (besides Room)

The One Reborn was a little weak, IMO, but I thought it was a nice callback to Tower Knight from Demon's Souls, so I ended up appreciating it.

but if there's one issue that I might have with the bosses is that they're mostly beast types and not humanoid, which I tend to prefer

I'm starting the dlc and the fights with hunters are awesome. Fast as hell and tough, but not spammy and spongy like those in the base game (besides gascogine).
