Like, I'm playing DS3, without having played any of the previous games, but I just don't feel even slightly compelled to care about the lore in this game... it doesn't seem interest me at all.
Also, is the story of all the games related?

Well, I mean... come on.

Demon's Souls and Dark Souls are the only two games with any sort of interesting lore. Dark Souls 2 is haphazard fragmented bullshit like everything else in the game, and Dark Souls 3 has a few interesting features but overall lacks the freshness of the first two games.

Its completely unnecessary to know anything about the story to enjoy the game. However, the game is 10x better when you do.

I watch YouTube videos that go over the lore, but I don't pay attention to it while playing the games.

It's a bad personal story though because the character-focus in front-loaded and basically from the point you reach Majula the only time it continues to be character focused is when you talk to the Emerald Herald and when you defeat the final boss (and some of the stuff they added with Aldia)

This. I wouldnt worry about the lore during your first run of the game. But afterwards, like lets say there was a particular boss or NPC you found interesting, you can look them up on YouTube. The Prepare to Cry series is pretty well done.
