I could be wildly misinformed but last I checked I haven't seen SSJ4 or SSJB in a hot minute, or really the rest of the SSJ's.

SSJ4 IS non canon.

He used all forms but SSJ3 vs jiren round 1 and all of them against kale and caluifla.

Also used SSG against Dyspo and SSJ/SSJ2 a bunch in the first half the tournament.

And in previous super arcs he used SSJ3 vs beerus and Trunks. Also SSJ2 vs black the first time and present day Zamasu. Other minor uses too.

SSB has been used a shitton so no id ea what you are talking about

Different forms use various levels of energy. SSJG is faster than SSJB.

A Saiyan most likely learns much faster in a prolonged fight. Goku hates going all out to learn even more about opponents and himself.
