you basically have to dip it in sugar every single bite though or it's way too tart

In it's early stages, isn't it poisonous? Or maybe it's the leaves that are very poisonous, I don't recall.

It's popular where I grew up in Pennsylvania, near Lancaster, the Amish made a damn fine strawberry rhubarb pie that I would drive to the market to pick up for the family on weekends.

American tastes tend to be sweet.

Canada likes tart. You can sorta taste the difference in a1 steak sauce and ketchup.

And yes they change recipes for local preferences.

I wish rhubarb were more popular here. It'd be nice to have rhubarb pie or cobbler every so often; my grandma used to bake with it but that time is long past.

Think that's a common southern/midwest thing in the US.

At least that's the region that comes to mind when I think of rhubarb pie.
