So, I have this weird kinda-moist curry paste in a can I want to use in a simple dish.
I've got some potatoes and some onions I want to use it, because it's what I have. I don't have any coconut milk, so I'm opting for just regular milk.

From what I can tell how to cook it, it goes like this:
1. Put some oil down and fry up the curry paste.
2. Put the diced potato and onion in, then put the milk in.
3. Simmer until it's good.

Is this right/wrong? Last time I sorta fucked around with it I used water, and the curry just sort of clumped up and the liquid wasn't the thick-looking stuff you normally see.

Yeah, simmering sounds right, the problem being I have no idea how to get the curry... curry-like where it's all creamy.

Same thing I had when I made chili, where it was just soup that tasted like chili (which was still good).

I don't know, it's always some sort of heavy cream, or half-and-half or coconut milk from what I can see.

But I'm getting hungry and don't care enough to check anymore, I'm making it.

not use regular milk for one!

beyond that, smash a potato chunk or two against the pan when it's cooked and mix it in. it will help thicken the sauce a little bit.

and for the super rich creamy curries they often use ground nuts to thicken and give it richness. cashew is great for this, almond works too

It turned out fine, the milk was a lot better than water though.

I mean, it's spicier than I can honestly handle, but, such is life when fucking around with curry.

From cursory looking around and googling, it looks like it's a Thai curry, so I'm not doing anything that would be considered sacrilegious or culturally awkward.

I've made Thai style Curry like this. I would have sauteed the onions to bring out more from them and at least add some chicken. I remember just throwing the curry paste in with the coconut milk which broke it down fine enough.
