Now I want soup.

Most specifically, I want a beef barely soup.

I will now do a search to find out where around here has it.

Tough to say. There's always the traditional Chicken Noodle, but Chicken with Rice can be fantastic. Then you have delicious beef soup. Also consider creamy soup(I prefer creamy Chicken above all else). Pure vegetable soup can be incredible with fresh vegetables and the "right" broth. Ramen-style soup is also delectable.

Just too many for me to pick one specific favorite.

Not a big fan of Olive Garden, but their Zuppa Toscana soup is awesome. It is very easy to make at home as well.

Clam Chowder is probably my favorite all time though, but is being rivaled by some of the Asian noodle soups.

I learned how to make chicken soup from scratch a few months ago using chicken spines/ribs, veggies, and herbs. It's very flavorful and especially good if you're a runner in terms of replacing electrolytes and giving you nutrients.

I also learned how to add in Asian elements if I'm feeling like it (e.g. miso paste, dried shrimp, bonito flakes, etc.).

It admittedly takes a good amount of time/effort though to make a nice soup. It's well worth it, especially if you're watching your waist.

Just use the carcus from the chicken the next day after you make it. I roast a chicken, then the left over chicken and bones all go into making a soup.

First remove the biggest pieces of chicken that is left off the bones, put it in a side dish. Toss the bones into a pot with water and boil it (add some spices at this point as well). After it reaches a boil, reduce the temp and let it simmer for about 20 more minutes.

Strain the broth out, and then pick off any pieces of chicken that are left on the bone and add it to the bowl of chicken. Saute your onions, mushrooms, bell peppers and carrot slices in a pot, then add the broth in, along with any slower cooking veggies (Brocolli/potatoes/brussel sprouts etc).

Finish adding any fresh spices (bay leaves/basil/time etc).

Simmer until veggies are soft enough for you (can vary, but generally at least 30 minutes).

Add your short term veggies now along with the chicken in the bowl (this retains more flavor in the actual chicken instead of spreading it all through the broth). Peas, Corn etc should all go in at this point (anything that cooks very fast).

Turn off the heat at this point (the broth needs to cool a bit anyway and is hot enough to cook the corn/peas and heat up the chicken.) Let rest a good 15 minutes like this.

During this time, if you like (or anyone likes) either noodles or rice added, boil it in a separate pot. Egg noodles are great, but pasta can work, and of course rice works as well. I personally like to add it directly to the bowls, so the noodles do not absorb all the juice, and you don't add a bunch of start to your soup (messing up the flavor). If you boil rice for instance, look at the water that is left over, if you do that in your soup, that water is now part of your soup.

You can also freeze the soup very easily in little glad bags, and then just quickly defrost it in hot water to quickly make again. While it's defrosting you just boil water for noodles/rice (or ramen even ) and bam, your set with a very delicious chicken soup any day in 15 minutes or so:)

If you roast a chicken once a week, you can have this every day for your lunch (along with a sandwich for instance) at work.
