Guy on defense intercepts the ball, runs it back like 80 yards. If the other team stops chasing him cause he's so far ahead, could he just stop at the 1 yard line to run the clock out until somebody goes to tackle him?

Has that happened before?

It's legal but it's never been done for obvious reasons.

People have done some freaky shit where they just stand around doing nothing and faked that they spiked the ball but nobody just stands at the 1 yard line

Likely legal, yeah.

However, since Leon Lett's infamous blunder in the SB, I'd think the offense would keep chasing him anyway and the defender would be leery of delaying too much in getting into the end zone.
