It's no different that you playing through Pokemon games with some of the weakest Pokemon in the game, or me trying to play through a Fire Emblem game with only archers. Taking it to such a ridiculous extreme may sound weird, but in the end, it's all done for the same reason: to add more of a challenge.

Not just for the challenge but it helps prove a few things

1) game design is extremely hard and it takes years even with a massively popular game like this to find all possible exploits
And 2) it's amazing to find out just how far we can take this stuff, I mean proving you can beat the game in single or low digit button presses? That's hilariously absurd but it's been (or is about to be) accomplished

Validity, time boosted vids could have the game edited and then played at a high speed and have the obvious edited part of gameplay overlooked.

This ties in to the whole "yes, world record speed runs must be played and recorded at 1x speed unless the game allows increased speed as a built-in feature" rule that only really came up like twice ever for discussion.

challenge is trying to complete mario 64 and collect all the stars while pressing the A button as few times as possible

what this topic is telling people to do is test if that platform will raise over time when mario is nearby. This is important because it will allow you to use it to raise yourself to the top of the level without pressing A, instead of taking the normal path where you need to press A once. Presumably getting lots of people to do it is to verify this pic isn't fake.

Notice that platform in the lava? That platform goes up and down. My guess is that it doesn't move as much going down as it does going up. But it's subtle, the equivalent of like a few pixels, which means it takes a super long time for the oscillations to have any measurable, much less useful, effect.

But leave it on for a week or two? It accumulates. Slowly. But it does.
