I have the following just sorta lying around. I can visit an asian market place on the way back home if I really need to grab something as well.

Two types of curry paste (red and masaman)
Dry Lemongrass
Star Anise
Bay Leaves
Cardamon Powder
Fennel Seeds
Mustard Seeds
Fenugreek Powder
Caradmom Seeds
A fuckton of Dried Curry Leaves
A can of coconut milk (the not-drinkable stuff)
Also some curry powder that I forgot I had and has been sitting around for over a year

Plus the normal-people stuff, like cumin, ginger, and other stuff.

What the hell should I make? I realize that I don't need to use everything, but there's just so much stuff that I don't see used in my quick chicken curry recipes I looked up, or those recipes used coriander, which I don't have.

I found an indian shop that sells stuff suuuuper cheap, like 200g of paprika for $3 cheap, and I went a bit nuts.

Make sure and remove the Star anise and bay leaves before you eat, that stuff isnt really edible itself

You can always put them in a little tied pouch of cheesecloth to make them easier to fish out

From what I understand, it's sort of like bay leaves.

You shouldn't eat it, but people eat them every once in a while, and it ruins that bite.
I'm not going to go fancy and get a cheesecloth though, I can scoop them out.

Its more that theyre just super hard and dont really soften up when cooked. People have been known to chip teeth biting into a bay leaf
