Kansas City is all about the sauce

As for cooking, it really varies from place to place; Q39 is wood-fired for example, whereas others like Arthur Bryant's is slow-smoked

Yeah the "styles" are bullshit. There's a chain up here called "baker's ribs" and it claims "st. louis style ribs with texas style BBQ"

It's a fucking sham. Took all my willpower to keep my inner KC BBQ guy suppressed while my coworkers were all like "MMMM SO GOOD"

EDIT: I'm not calling Texas or St. Louis BBQ a sham, I'm saying places that claim to be their "style" are shams.

1.) Arthur Bryant's (the OG location on Brooklyn)
2.) LC's (gets slept on a lot; right out by the sports complex, perfect for pre-Royals/Chiefs games)
3.) Oklahoma Joe's / Joe's KC (the OG location on Rainbow)
4.) Q39
5.) Either Gates or Jack Stack. Pretty interchangeable in my book tbh, though JS has cheesy corn

Kansas City

KC bbq is about sweet tomato based sauces with multiple sources of sweeteners in the sauce.

Carolina is going to have vinegar and/or mustard based sauces. Theyre usually going to be spicy too. I believe a purist Carolina bbq sauce is just apple cider vinegar, red pepper, and salt.

Texas is king of brisket and they put a ton of black pepper in their rubs.

i'm gonna go with my man zurk

i've had KC bbq before and i liked it. can't remember carolina but i remember having a vinegar-y bbq sauce once and i didn't like how runny it was

outside of sauces and onto meat, st louis style ribs are my absolute fav. dry rub, lots of meat and a tiny bit of fat. sooooo good

I appreciate this list for when/if I ever go to Kansas City, MO. In return I will give you my unranked favorite pizza places in the Twin Cities, with honorable mentions:

Top 5
Black Sheep Coal Fired Pizza (Multiple Locations)
Broders' Cucina Italiana (2308 W 50th St, Minneapolis, MN 55410)
Element Wood Fired Pizza (96 Broadway St NE, Minneapolis, MN 55413)
Pizza Nea (306 E Hennepin Ave, Minneapolis, MN 55414)
Young Joni (165 13th Ave NE, Minneapolis, MN 55413)

Honorable Mentions
Aurelio's Pizza (2827 Hamline Ave N, Roseville, MN 55113)
Cosetta (211 7th St W, St Paul, MN 55102)
Red Wagon Pizza (5416 Penn Ave S, Minneapolis, MN 55419)

Think I'll tag @Dustin1280 in this post too since IIRC I found out about D-Spot Wings through him & I should probably return the favor. A few things I should probably also mention:
-Aurelio's can be kind of hit-or-miss, but that was my favorite pizza spot as a kid & I still enjoy their pizza from time to time.
-If you want to eat at Young Joni you'll have to book a reservation weeks in advance - it's extremely hard to get into.

Yeah, Black Sheep is amazing - especially their garlic. I love that they slice it into strips rather than mincing it. Also since pretty much every pizza place I mentioned sans Aurelio's is coal-fired/wood-fired pizza, Cosetta is probably the best thick-crust option in the cities; one slice is like a full meal, too.
