like carrots? organic multi grain pita bread dipped in hummus is actually one of my current go-to healthy snacks, but the pita bread lasts like 3-4 days tops so its hard to stay stocked up on

Go old school and bake some hardtack. It's made of flour, salt, and water. You can even add jelly or something if it's too plain by itself, but I prefer to eat it as-is.

I like it, but you can soak it in soup or dip it in whatever you want to soften it or add flavor.

It's difficult to consume in its original form, which can be good if you don't want to eat a lot but still want to be chewing on something. But you don't have to eat it that way.

i've considered just getting gum for this reason.

maybe i'll get some warheads or something. not exactly healthy, but it'll last a long time so it'll level out.

baby carrots. You can dip those in hummus. Broccoli is good for that too.
Light string cheese.
Hard boiled eggs.
Yogurt.
A grilled chicken breast. It's not exactly a filling meal so I feel like it counts.
A piece of just about any fruit.
I get this chicken salad from a nearby hipster grocery store. It's shredded rotisserie chicken, celery, green onions and damn near no mayo.
The same grocery store has curried chicken salad. Curried chicken, cashews and some other shit.
Sushi is often a fairly low cal snack. It depends on what you get though. Avocado some fish and the tiny bit of rice is tasty and the only thing not great for you is the rice.

That's almost my entire diet when I cut weight.

Chilled grapes are my go to. Only around 60 calories per cup, and they're sweet, crisp, and refreshing. You can eat an entire bag of grapes and not feel bad.
