The last two routers I've owned have both given out two signals, ok?

Ex:

<Router name>
<Router name>-5g

Why they do that?

ok?

I heard that the 5G one is better, but not all the old stuff are compatible with it, which is why it outputs both signals until it becomes the norm. Not sure if it's true since I never bothered fact checking it though, so don't quote me on this.

It's not true.

I don't know that it's better. Slightly faster if anything? My understanding is it's just another frequency separate from the clogged 2.4ghz. Devices that don't support it won't show it in your list. Of the dozens of things I own that go online (consoles, handhelds, PC's) the only thing here that shows the 5g network is my tablet.

2.4ghz is general purpose with good range and good speed, 5ghz is speed-focused, travels poorly through walls but offers twice the speed.

2.4ghz overlaps with bluetooth, 5ghz does not.

There ya go then. I knew the basics but hadn't looked into why 5g was a rarity. Difficulty with walls is a significant downside.

My PS4 controller is the only thing with BT. I try to limit wifi interference and chose a different channel than my neighbors.

I didn't know this. Still it's not something I care about as I haven't changed my router in a a good few years. I've simply no need to.

You can also set one up with restrictions for guests/friends.
Slower speed, lower video quality cap, throttled speed if you have multiple friends over.
Even block websites you don't like.
My router has a Guest line but I don't use it.

Really? Is it possibly a settings issue? Because even my old ass Galaxy S5 shows my 5g connection.

You say consoles. Is one if them an Xbox one? My early model Xbox one also runs on my 5g connection.

5G mobile signal vs "5g" on a wifi SSID. 5G is high volume mobile signal and infrastructure for loT in cities primarily, 5g on wifi SSIDs denotes it using the 5ghz band with standard wifi protocol.

For some reason, I just skipped right over that. But is it just coincidental that 5th Gen runs in the 5Ghz range? I can't find anywhere that says 4G runs in the 4Ghz range.
