"Demon might be an offensive term, we prefer mortally challenged" just sounds like the mocking of a megacorp's boardroom-approved attempt to downplay a demon invasion. It ain't that deep. Makes sense to me. I wouldn't play Doom either way because I'm a wimp when it comes to horror and gory stuff, but I think this joke is funny and people are oversensitive.
