why is it just one big piece of meat on the plate like a big piece of chicken or a big piece of beef or such as pork? why dont they cut up into bit sized pieces instead of having a KNIFE on the table which is supposed to be for the kitchen?

I'm white and I much prefer the Chinese style you described above. It's rare that I serve anything that has to be cut at the table. However, I also don't eat much pork or beef, so maybe it has to do with that.

You can, but by time you are halfway through, it's room temperature and getting colder and you have to reheat it again. I don't like stopping in the middle of a meal to heat it up again.

Also, it's appreciation for presentation and the culture of the food. That's fine that the Chinese have their methods, but so do other countries and cultures. The same people serve fish whole, even with the head still attached in some instances. We in the states filet it first and just serve that portion most of the time.

I eat stirfry's at least once a week, and I've never experienced this 'heat loss' problem.

It depends on quantity and how fast or slow you eat. When I get house fried rice and put a large portion on a plate, generally i'm halfway through before the rice is already getting cold.
