She created Sheik as a male character, as a disguise so nobody would suspect that it's her. It's true that even though when zelda dresses up as Sheik, she remains a female, but Sheik, the made up character is still a male. When Sheik is standing there, and you point and say "that's a female", you are absolutely correct, but you are actually pointing at Zelda, a female, dressed up as Sheik, a non-existent male character. If J.K. Rowling dressed up as Harry Potter, would that make Harry Potter female? No, Harry Potter would remain a male, made-up character, and J.K. Rowling would still remain female, even though she was dressing up as this male character. So yeah. The Sheik we know from Ocarina of Time or Smash is a female, but that's only because it's actually not Sheik, it's Zelda. Sheik doesn't exist, even in Zelda. But he is a male fictional character. His frame is noticeably different from Zelda's in ways that align his with typical male norms.
