gfaqs is one of the rare exceptions

whenever i sign into icloud, amazon and most other shopping sites, i have to keep entering my password to sign in again rather even though i've selected 'remember me'

Check your browser settings and make sure it's set to accept cookies (at least from primary sites, you don't have to accept third party cookies) and that it's not set to delete cookies when you close the browser.

Some extensions might screw with your log in settings, too.

I don't know if that will help 100% since you said GameFAQs keeps you logged in, though.

Have you tested another browser to see if the issue is the same there?

Remember me is what tells cookies to basically keep you logged in after you close and reopen your browser. On sites that have you reauthenticate your password, usually due to financial stuff, Im pretty sure that has to do with your browsers autofill settings
