I think it's because to me, in a cheeseburger I don't want the cheese to be too predominant over the burger. You put something in there like cheddar or swiss and it's too strong, it detracts from the grilled beefy goodness. Provolone, Muenster, Gouda, all too melty, they goop out the sides and leave no cheese in the middle, their flavor is too subtle. Pepper jack, that's just redundant when you want a spicy burger, because the spice should be in the meat and the sauce. But American cheese, it's so processed it retains this thick layer when it melts, it's kinda plastic and serves almost a mechanical function in a cheeseburger. It's just right.
