I'm trying to not break the game in half and actually get far.

In that case, I'd just go with a straight up Warrior type character. They're more than good enough to get through the game. The skills don't need to be too fancy. Long Blade, Heavy Armor, Block, at least one magic skill (probably Mysticism), Speechcraft/Security, etc. Try and cover each Attribute in your Major/Minor skills. A Combat focus and Strength/Luck for your attributes are fine. For the sign, probably either The Lady or The Steed.

Oh, and as for the race... probably Redguard or Imperial (or even Dunmer). Or Nord or Orc lol.

A Telvanni Mage is my personal favorite, but it's too tempting to break the game with one (for me anyway). Go with one if you want. It takes more investment than the above class to become good.

For graphics, I like the STEP guide (it covers some other mods too): https://wiki.step-project.com/Guide:Morrowind

MGSO is an easier alternative (it installs various graphics and sound mods with a single installer), but it's not as good as the STEP guide and has a few bugs/problems.

The essentials are: Morrowind Code Patch, Morrowind Patch Project, MGE XE, Tamriel Rebuilt (probably too much content for a first playthrough though), LGNPC, LGNPC Pax Redoran, LGNPC Tel Uvirith, Less Generic Nerevarine/Tribunal/Bloodmoon, Herbalism For Purists, Talrivian's State-Based HP, Illy's Solstheim Rumour Fix

There are loads more, but that's enough to be going on with for now.
