I guess both, and depends on the context. I'll say happy holidays in most cases maybe, but when its Christmas Eve and Christmas I'd definitely say Merry Christmas

Either way. Christmas is one of the holidays.

Just something simple like 'have a good holiday'. I'm not doing it to be PC, honestly if it could offend the rugsuckers I'd offend them often. Instead I feel both sayings are a little overused so I go with something a bit different.
