I always do the shoulder tap. Both of my arms go underneath her arms and land on her shoulders. That way anyone around or the cameras can clearly see I did not grope her.

If both of you are single and fancy each other, a good idea is to try to still be holding on to her waist for a very short while, after you finish hugging. If you sense that she feels something and it's not awkward for her at all, that is a very good sign.

As for the actual hug, here's a tip: never tap the person's back. patting someone on the back while hugging is like saying "ok that's enough, this is too much" If it's supposed to be a heartfelt farewell or something more intimate and the girl pats your back, I'd say there's a strong chance she doesn't see you romantically or isn't ok with being hugged by you.
Also, if you go for a farewell kiss on the cheek, see if she actually kisses your cheek or just does a greeting quick sideways kiss. If she actually kisses your cheek do the same, and try to make it a good kiss (not a long one, just a good one. You'll learn to tell the difference when you do enough kissing). Combine this with the holding on to her waist after hugging and it might make her realize that she's super into you. But ONLY if she already likes you. This will NOT make a girl that's not interested in you become interested in you. This type of stuff on a girl that's not into you will make her disgusted by you.
