The lead engineer was talking about how their most important clients would frequently change the scope of the products and expect the company to meet the original deadline anyway and I asked them how they have improved their project management methodology to accommodate for the customer and I also asked them if they pushed back at all, like I framed a question for them as "what would you do if the customer changed the product way beyond scope and you were literally unable to meet their deadline?" They pretty much said "well in that case we'd work overtime on weekends"

Because it is. You're there to see if they're as much a fit for you as you are to them but you have such an inflated sense of self-importance that you apparently think questioning how they do business is normal interview etiquette. The smart thing to do is evaluate processes in place as you start working there and then work to improve them. Your question, especially with your experience compared to theirs, likely just comes off as entitled millennial BS.

I think I'm entitled to ask how they do business if I plan on joining their organization.

It shows I have a real interest in how they do things, and would be eager to contribute to it. But fuck it if companies all want to hire Yes-Man drones that want to live on their knees and suck corporate dick maybe I just need to get a prescription for anti-depressents and learn how to live in this stupid fucking world.
