I've played Golden Deer and Blue Lions, and I'm about midway through Black Eagles Crimson Flower

Deer > Lions > Eagles has this nice escalation in tone; GD is the lightest of the three routes, though not without its dark moments.

One of those two routes is very similar to the Golden Deers path, so I wouldn't suggest doing those two in a row.

I went Deer > Eagles (normal ending) > Lions > Eagles (true ending)

You can mix and match the first three, but definitely save the true ending for last.

Eagles (Rhea) > Lions > Deer > Eagles (Edelgard)

This. Morality wise, good to bad it's Golden Deer > Blue Lions > Black Eagles(Church of Seiros) > Black Eagles(Edelgard). Although Golden Deer and Black Eagles(Church of Seiros) routes are very similar map wise in the second half as well from what I've heard. So if you want your routes to be mostly different start with Golden Deer and end with Black Eagles(Church of Seiros) instead of ending with Black Eagles(Edelgard).

Siding with Edelgard is definitely not the true ending. Anyone who says so is lying and trying to push their own headcanon. Especially considering the game makes Edelgard one of the main antagonists in all of the other paths beside the one that lets you side with her. The closest ones to a true ending is Blue Lions or Golden Deer. Blue Lions because it was said to be the very first scenario that was finished in a developer interview. Golden Deer because it follows FE tradition for the most part story wise and thus has the most happy, hopeful ending..

That is not the true ending. The closest one to a true ending is Golden Deer.

Is there any chance that they add an actually true ending with DLC?

They may, but I doubt it considering the upcoming DLC scenario is about a new house or group of characters in a new scenario that may be standalone from the main story. Also, I went back and did a edit to the post you quoted.

The goal is to put Church and Eagles at opposite ends because they share the first.....10 or so chapters.

A good thing to do might be to make a separate save once you reach Chapter 10, that way you don't have to replay it

Also, get Edelgard to nearly max interaction and visit her after every single outing.

The biggest reason is that although they don't share story elements, they share several similar maps.
IMO the ideal playthrough is:
Church > Lions > Deer > Eagles
