I don't know how I was playing my original file but somewhere along the way I fucked and there's huge gaps in the party levels. Any tips on how to play this "correctly"? I loved what I played so I'd like to finish it this time.

Tried to get into that game but it was too much reading. I like reading books but I don't like reading anime dialogue.

Decide on a core team of three with a flex spot for story. My core was Ophilia (who I started), Therion, Tressa. Then just do the chapters in level order and make the most of the tools available to you in combat. Thats how I did it and never felt like I needed to stop and grind. Often had to take on a few bosses a few times with different strategies, but I never felt like winning was impossible.

There will always be huge level differences.
The character you pick first will lower-level quickly. For instance chapter 2 might require level 23 but chapter 3 requires level 30. That means by time you finish one characters chapter 2, the party should be sitting between 21 and 25. Then you have 7 more chapter 2s to do, each time swapping at least one party member.
