Political reasons

Ransom or a bargaining chip (money or for the release of POWs from the kidnappers faction or nation).

To bang or marry (This rarely happens irl though).

Yaknow, in terms of IRL I don't think I've ever heard of a kidnapped princess... it's possible it may have happened, just don't know.

I've always assumed that the typical fantasy dragon just likes looking at "pretty" things (like gold) and wants as many of them as possible.

I was about to say that the original SMB manual says that Bowser kidnapped Princess Peach (Toadstool) to keep her from turning the Mushroom People back to normal, but it actually just says that she can lift the spell and that Bowser is holding her, not that that's why he's holding her.

Or the princess could have a thing for getting kidnapped, and you, as her friend, see no reason not to oblige her . . . interests. Now if only that socially awkward guy in your circle would stop smashing things every time your princess friend was in the mood.

Legitimately though, I love old myths - and I like how the Greeks actually recorded matralinial lines, woman seem to disappear as a matter of convenience in many other cultures.
