Nah, a reverse sear is where you slowcook a giant steak in the oven, then crisp up the outside on just a smoking hot pan.

It's a good way to make sure a large cut of steak is cooked perfectly.

Well sure, if you're a fancy pantsy rich person with a sous vide machine and also a vacuum sucker-outer-thing.

There is a downside to that though, now that I think about it. Part of the real benefit of a reverse sear is that you use the dry air of the oven to, well, dry the outside. This makes it so that when you do fry it up, it crisps up even faster without needing to pat it down at all.

Sous vvides are like 80 dollars and you don't need a food vac, you can use zip lock bags and push the air out, thats what I do. Also, you pat the meat afterwards before you sear it, same effect.

Used for other stuff not just steak. I once used it to deep fry an entire filet of fish. Used to to fully cook the fish, battered it, and then fried it to crispy it up. Could I have done it with smaller pieces? Yes, but having one gaint filet that's fried, that's an awesome thing to serve as a main.

Psh, that isnt even the best way to fire cook a steak. Chunk wood is. And a fire will NEVER evenly cook a steak well. Closest you'll get is slow cook it at that point you'll have more smoke flavor than beef.

Stovetop is best way to cook steak... no pan, just put it right on that heating coil.

Needs to be a coil though, if you have one of them freakly flat stovetops it won't work

It's really not that bad. You need to have the time to do the prep a couple hours before you want to eat because the cook time is so long, but once it's in the oven you really don't have to do much of anything. Toss it in there, go watch a movie, then eat when the movie's done. It's basically slow cooking lite.

"Overcooked" can be defined only as "more cooked than the person eating wants it to be." If somebody wants a well done steak, then well done is the proper degree to cook it to. Any other definition is pretentious nonsense.

It's also worth noting that cooking an expensive steak well done completely removes what made the steak expensive (marbling and dry aging both pertain to the fat content of the steak, which is more or less completely rendered out by the time you hit well done), so if you like your steaks well done, don't waste your money on more expensive ones. Medium rare is the objectively the best way to showcase those traits (the fat has just begun to render, meaning it's still there to be tasted, but is also soft enough to not interfere with the texture of the meat), so something in that range is the way to go if you want to get the most out of an expensive purchase.
