After seeing it, and finding out how it works and gives the apple flavor I decided to make it and see what it was like and report on it.

Honestly, not too difficult to make. I'd recommend finding a good quality pie crust that you can use. None of the ones at my grocery store are any good, all...three brands just suck. Including the pillsbury pie crust, store brand crust, and whatever the more expensive third brand is.

If you can't find one, making your own is best.

Here's one I recommend, but we're making fake apple pie, so I went with fake store brand crappy crust.

What I think of it? The crust is garbage, please buy good crust.

Apple pie is so sweet most people dont realize theres almost no apple flavor, its texture and sweetness that you like.
It's pretty sweet and has the texture of mashed apple pie. You have some sourness which you get from the lemon juice and cream of tartar as well. Texture is gelatinous, you really don't taste any ritz crackers at all. I'd say this tastes pretty familiar to those apple pie fillings in those cheap pie dessert fillings.

It's alright, solid thing, I'll probably finish the whole thing. I wouldn't mind using this as a filler to make some copycat fig newtons or those grain pocket bars. For something that came out of the depression era, this recipe isn't too shabby really.

I'd recommend making it just to experience it.

Also I bought some "extra creamy" cool whip to go with it as suggested by the recipe, it tastes good at first, but it leaves you with a chalky after taste? Do not recommend extra creamy cool whip.

Does not taste like dog food too, bonus points there.

Guess I should mention that this could possibly trick some people into thinking it was apple pie. Especially people used to eating apple pie filling from those aforementioned desserts.

TL;DR: Alright, give it a shot, not too hard to make. No fake crust or cool whip. No ritz cracker taste at all.

A big part of "mock" foods is having a good enough approximation to trick the brain, not making an exact replica. You get the right blend of, for example, salty/fatty/sweet/smoky and you can impress upon the taster a presence of bacon. Some things are certainly not reproducible to any significant extent, but that's when circumstances come into play and imagination fills in the gaps.

Give it a shot, really, it might surprise you. But if the apple pie filling of just general desserts in general makes you lament for real apple pies, don't make it. I also make pies and bake a ton of cookies and bread so this was just a fun little thing to learn about and to pocket for possibly another time. At least the filling, not the whole pie. Good baking experience to have on hand.

Looks like it has apples in it, but it's probably made up of a lot of filler, and that's ok, normal apple pie is usually like that too (not as sparse as in that picture), unless you really load on those apples.

The next quoted post explains it. It's also a good learning experience, who would've thought you could pull this off with some ritz crackers? Think of it as a useful technique to use if you're ever on a show like chopped. Got some random crackers make a dessert, don't know what to do? Bust out the cream of tartar some random acid and sugar elements and you can make some apple pie despite not having apple pie. Like I said, I probably won't go making this into a pie, but the filling CAN be useful for making some apple flavored filling that could be used in a future dessert.

And that's also why I gave this recipe a try. It's not bad, and I bet it could fool a lot of people if I didn't tell them there was no apples in it beforehand. It's fun to see how close the approximation can be, palate expansion. I believe in giving everything a try even if it's something you don't like. Your tastes change over time.

Gave some to a neighbor, and they enjoyed it. They said the crust wasn't very good but they liked the filling a lot. Then I told them it was made with ritz crackers and we had a good laugh about it. So yeah, just the load of sugar and texture is enough to invoke that apple pie taste as mentioned in the quote in the OP.

They're used to getting testing from me for various baked goods I make, but only if they're honest. So good on them for noticing the crust sucked.

First of all pear pies are delicious.

Second, good job on the pie TC. I was just giving you shit on the egg wash, though I would have done it regardless.

Glad it turned out well, I was curious about the final results. Thanks for the tag even if it took me forever to notice it.

Also learned more about cream of tartar. Which I have used, but also always had a vague dislike of simply because of the name.

I think of seafood, but I tasted the sugar water and tartar mix and it has a bit of sour sweetness. Then you add the crackers and it magically turns into what apparently is apple pie filling. Throw in cinnamon and some lemon juice and you get that sour tartness sweet taste of apples. Throw in the toppings and sugar overload and you got something that tastes similar to apple pie.

Within the next two days I have someone else who can try this so I'll save a piece to see what they say and post it here. They usually love everything I bake as well, it'll be funny to see how they react to this when I say it's real apple pie. Can't wait to hear questions about what apples I used.

I was asked how I mashed my apples because they liked the texture. I told them it was mashed crackers and they didn't understand until I told them it was a mock apple pie and there were no apples. They did like it however and thought it was interesting. They asked for the recipe which surprised them even more but I explained how cream of tartar works and the crackers are more just filler.
