Anyone else finding themselves cooking way more? Its been fun!

Things Ive made so far:
sweet & spicy short rib tacos
shrimp pasta
fajitas
korean bbq with homemade sauce and rice
breakfast sliders
kobe beef burgers
shortbread cookies
banana bread

Mostly doing just simple but tasty things. Almost all from scratch. Im still working full time and doing the majority of the chores.

What about you guys?

Well, I made cambells tomato soup and added italian diced tomatoes and a little extra basil + some white pepper and garlic salt (not a lot)

Nothing different than usual. I tell myself I'd like to do some baking.. but I know I won't.

I do want to make some shakshuka soon though. I saw it online and it looked interesting and simple enough

I love Campbells tomato soup. So good with grilled cheese. That all sounds like good stuff to add.

Omg vegy cooks

It was my 2nd time making it, the first time I wasnt aware theres special sushi rice (makes it sticky) so it fell apart on us. My 2nd go around I still didnt have the right rice BUT I ended up not rinsing it so there was starch in there and then I added a saucepan of rice vinegar, sugar, and salt after the rice had cooled down and it worked.

It's just salmon and cream cheese so nothing overly fancy but I've been missing sushi like crazy so figured I would try my hand at it.

Same as I always have, just about three additional meals a day. I have kids, so its roughly a five meal a day kind of thing.

Chicken florentine pasta
A veggie beef broth mixture poured over some garlic mashed potatoes
Fruit smoothie bowls
Two different cheesecakes(one is basic with cherries on top, other is chocolate)
Brunch plates that consist of black beans, rice, curry eggs, salsa, and spinach

waffles (got it down to mixing it a cup and not making a mess making and pouring it on the waffle iron thingy)
quesadillas of variety (breakfast, steak, etc)
carne asada grilled steak
miso soup
tomato basil
spaghetti (beef or turkey ground meat and mushrooms)
sweet & spicy sirloin petite grilled steaks
sweet & sour grilled chicken with mixed veggies (also grilled)

just had to change the propane on the grill. using it alot during the day for cooking burgers, kebabs, and steaks.

Sad to say that all I've really been focusing on is perfecting my grilled cheese.

Before there wasn't time. Now that there's time, I really don't want to go to the grocery store. :-/

For Easter my wife made:

Tulumbe (Bosnian dessert)
Pita zeljanica (Spinach and feta pie type thing, another Bosnian dish)
Carrot cake
Apple pie

All from scratch.

start with some olive oil in a big pot to saute any of the veggies you might be using, including those bellpeppers fine diced, onions if you like them, and either minced or roasted garlic.

diced tomatoes work if you like chunkier sauce, but i usually use tomato puree and tomato paste. if you can get the paste, that helps to thicken up the sauce whether you are using diced or puree. after you dump the paste in, fill up the paste can with water or red wine and mix it around to get the last of it out of there and dump that in too. the seasonings i use for marinara sauce are:

garlic powder
garlic salt
onion powder
onion salt
salt
pepper
parsley
basil
oregano
bay leaves
crushed red pepper
a bit of sugar to neutralize the acidity from the tomato

after the veggies saute a bit and become fragrant, add in the tomatoes and liquid and then all the seasonings. simmer on low for a few hours, stirring occasionally.
Oooh I have everything but the red wine. Would chicken stock or white wine work? I like that Im not the only one who adds sugar to tomato sauce. Always thought it made it better.

I mentioned diced tomatoes because its all Ive got. Would you recommend putting it all through a blender after? I have a vitamix I could use

I really haven't had much opportunity to cook: been closing at work a lot. I'll finally be able to cook tonight though, and there's leftover ham. Maybe I'll do some sort of rice stir fry. Got lots of beans and some kale, so it would work out pretty well.

I just kinda winged it! It was like 3 apples peeled/chopped, 1 tbs butter, 1/4c sugar, some nutmeg, cinnamon, cloves & vanilla extract. Throw it all in a pan and cook til the apples are soft. Then I strained the apples out and boiled down the juice so itd get thicker. Put the apples back in and added a spoon or so of flour to thicken to a good consistency.

I'd never made hand pies before, they're cute but it was kind of disappointing how little filling u could cram in there :b Good if you like crust though, and I'm sure they'd be awesome deep fried
