I haven't sat down and watched these since the DVDs came out. I usually just skipped to Season 4 or 5 when I was randomly watching the shows on Hulu or Netflix.

I just finished the episode Starvin' Marvin. I know Trey Parker himself hates the first 3 seasons, but they're still really good in a nostalgic type way. I miss some of the weird characters like Ms Crabtree the bus driver. I forgot how funny those early running jokes were.

Some of the stuff is admittedly pretty stupid, but the structure of the show is remarkably similar to the later seasons even in season 1 although it's just more out there.

Funny enough these are leaving Hulu in 2 days and going to HBO Max but I have HBO Max too so I can continue right where I left off.
