I tried to play the Dark Souls remake (my first Souls game) and it's so slow and you have to wind up for every move and your animations are super long so it makes it weird when you slooowly get up and then roll extremely fast etc

I really liked Salt and Sanctuary, cause eventually I was a superfast magic ninja

None of the Souls games are fast paced. The closest you'd get is BB, but even compared to a lot of fast paced games out there, it's pretty slow. Your only solution is to use a faster weapon, but even that's pretty limited.

Make sure that youre light enough for a fast roll. Also, look up how to get the Dark Wood Grain Ring. Weapon choice obviously matters too.

But youre not going to be getting wildly fast speeds. For that, check out Demons Souls Bloodborne, or Sekiro. Both are faster than Dark Souls.
