Because the geometric concept didn't exist when the mathematical concept was created.

And while retconning it would be possible, the fact that only nerds know what a tesseract even is limits its colloquial viability, plus "to the fourth" is faster to say than "tesseracted" (3 versus 4 syllables). "Tesseracted" is marginally quicker to type if we include spaces in the character count (12 vs. 11), but that's an extremely trivial difference that's made completely moot by the fact that it's far more common and practical to just type "^4."
