There is a self-admitted vtuber girl being played by a guy using all sorts of expensive tech formerly associated with the company that used to have Kizuna Ai under their belt. Her name is Tomari Mari, and she's played by a guy who's I think just hit college age. Genuinely sounds/acts/talks like a girl and puts on a good show, also pretty good at gaming.

There is also a character named Noracat who was revealed to be played by a guy by a technical accident, but Noracat put up a pretty good explanation video that I still think was one of the best handled mishap of this level that I've personally seen.

But in general though? Like people said, there are a ton of evidence out there that a lot of the girls are girls in real life. Mostly because companies like Hololive hired people with previous streaming experience, which meant that people have found their old channels in droves. Yeah varying levels of attractiveness but imo at least half of them definitely don't have to hide behind an avatar, but their avatar enhances them because it feeds into playing a character for entertainment.
