They are difficult to cook correctly, low and slow doesnt work Iike it does with brisket or pulled pork. You need moderate heat for 4-5 hours.

They can be a bit of work, but properly prepared ribs are phenomenal. You have to remove the membrane and cook low and slow. I prefer dry rub with vinegar and spice mopping. Recently, I've opted to do an Ethiopian berbere style ribs and they turned out fucking fantastic.
