Vanilla is fine, you just get the 4GB patch and the NVSE, that's it. I've had fully vanilla runs with ZERO crashes, just a few mild bugs and glitches that don't even impact the game. @topic: My only gripe with New Vegas is how many quests there are for gaining faction points with the NCR, and how many little there are for other factions. I'd recommend the Viva New Vegas guide - which I used myself - for modding. https://vivanewvegas.github.io/ It's basically vanilla+, so it's a good baseline.
