During lockdown I've been letting my beard grow longer than it ever has before (more than an inch or so) and the stiffness of the hair is now starting to bother me. Any internet search just yields a ton of products that advertise a lot of bullshit jargon about "growth and thickness" and I just need something that will make the hair softer but not leave a residue that will feel oily to the touch or make me smell from across the room like some people I've known before.

Use beard shampoo and conditioner. Don't towel dry it but blow dry it with a round brush.
