The java version works fine so this is for the Win10 version.
The 3D elements work perfectly and the RTX is really cool... but the UI elements are really janky here is a short example of what I mean (it's just a quick low quality video, but you can see the problem)... https://youtu.be/V3v86NTpN0I --- "Salt cures Everything!" I can't really tell what the issue even is from that video. I can see it even in the video... the menus are like 1/4 the framerate of the game, and since the video got crushed to 30fps that's particularly glaring --- "Salt cures Everything!" To me it just looks more animated than the java version. E.g., in the java version there is no animation when moving items between inventories, it's instantaneous.

just use java version? I can see lots of complaints about performance issues with windows 10 version and lots of useless replies from MS. It doesn't have to be an issue with your system, it may just be badly implemented.

Yeah there's no reason to play the windows 10 version unless you're playing cross platform with a console player or something

The windows 10 one is the same as the console versions I think. I don't entirely know why it exists, I guess it's part of MS's thing to have all their games on PC and Java doesn't really serve that ecosystem.

I think Win10 is the only version that supports RTX. I play the java version with shaders and it looks really nice. I don't know if RTX is worth it.
