Well the district manager was in here showing off pictures of his new horse and ranch the other day, and my cook that works the most hours was denied a raise, and shes making 14.50$ right now

At least with desserts, there's actually some room to justify pricing them so high. They often require different skill sets and ingredients from the rest of the menu, are at an increased risk of spoilage due to being ordered less frequently, and slow down turnover pretty considerably when tables order them (hence servers always push tea/coffee with dessert, which are incredibly high-margin items). A lot of places just don't offer dessert at all because of how bothersome it is, so I can understand those that do pricing it high to offset that hassle.

That said, knowing that doesn't stop me from looking at dessert menus and saying "I could make that entire cake for less than what they're charging for a slice."

it has in California, it goes up a dollar every year till next year when it hits 15$.

But they criminally underpay the cooks at this particular place, and yet started me at 10k more than I was making at my last restaurant.

I'm sure thats okay for a lot of people, but I was a cook for so long that knowing what I know now, I never would have taken the job

It can be really frustrating because even restaurants that have a tip sharing system often exclude cooks and servers share their tips with bussers, the host/hostess, and maybe dishwashers. Everyone in restaurants is doing a lot of work but it can be really disheartening to sweat over hot grills and fryers all day knowing that youre getting a short end of the stick.

It isnt like that everywhere but it is at way too many establishments in my experience.

That's in a lot of places where the job is someone's "passion". It's what people use to beat over the head of teachers a lot.

The owners should be able to use the data available to determine what surcharge would cover the gap most accurately over a pay period. We'd need to see the data to day for sure if that's all they're doing or are trying to profit off this. Either way it's up to the free market to determine if your food is worth any up charge at all.

On one hand I totally understand how crazy difficult it can be to keep a business running. On the other hand I've anecdotally gotten tired of small businesses, especially restaurants, acting like they're owed something by nature of existence. Most restaurants serve average to below aversge food and then charge obscene prices for it. They SHOULDNT survive tbh and its not because of politics. Serve good food.
