I didnt know that if you have water in something like plastic or paper that it becomes much harder for the plastic to melt or paper to burn

Pretty sure that's made out of a similar material to a sous vide bag. Towards the end when the camera gets closer to the bag it definitely appears that the bag is at least made of something more durable than a grocery store plastic bag.

Mostly unrelated, but when I lived in Sierra Leone plastic bags were commonly used to get fires going. Locals would take a lighter to the bag and then let the molten plastic drip into their coal pot to get the coals started. I didn't want to constantly inhale those fumes so I decided to be bougie and just bought a propane gas burner.

maybe but because of the way water works you could do this with any plastic durable enough to hold water as long as the melting point of the plastic was higher than the temperature of boiling water

bur like has been said already you may very well be cooking plastic into the food

but still, it is cool

Water has a high specific heat capacity, so it will constantly be drawing heat away from the plastic. Plastic also has a higher melting point than most people think - most won't melt until roughly 170 degrees, so you could, in theory, have boiling water and still be cool enough to not melt the plastic.

I would be much more concerned about chemicals from the plastic leaching into the water at that point, though. Would not recommend this as a cooking method.

I mean, I personally wouldn't because of the potential for chemical leaching, but that's just my initial reaction without doing the research. It's possible it's safe, I don't know for certain.

Sous vide happens at a much lower temperature than this. The water baths for those are typically around 160F, far below the 212 at which water boils, so you won't have nearly the same risk of leaching chemicals. The freezer bag probably wouldn't melt, but I'd still strongly advise against it.

I learned this from an episode of survivor man. He did it with a plastic water bottle. One of those prefilled, single use, disposable bottles. He used it to boil some nasty looking water that he found.

That's how fish is cooked in a lot of developing countries (not sure where this video is from or if it's from a developing country). No part wasted. I hate picking the bones out, but for others it's part of the experience. I guess. Some people even eat the weaker bones. Adds a bit of crunch.

You've never had like matzo ball soup or any other type that comes with a large piece that needs to be broken up? It's not hard to break up a boiled fish with a spoon. Personally, my biggest problem is the bones.

I can't see any scales. The pattern on the skin might give that illusion, but there's no actual scales visible as far as I can see. We only get a brief look though and I could be wrong, but scaling fish is a near universal thing. It probably hasn't been gutted, and I don't see any cuts indicating it has been. In my experience when cooking fish like that, it's just scaled and boiled with all the innards left in tact. They'll likely eat the organs themselves, if not feed it to a pet.

Fun fact: one of our current biggest exposures to BPA is thermal receipt paper. Theres more BPA in a single thermal paper receipt than the total amount that would leach out from a polycarbonate water bottle used for many years. So, it's always best to opt for digital or decline your receipt unless you really need a physical copy. And if you're a cashier in constant contact with them it's a good idea to wear gloves!
