Try starting with his stories that were adapted into movies.

I'd highly recommend:

Different Seasons
Movie adaptation, Shawshanks Redemption, Stand By Me were from this book.

The Green Mile
Better than the movie

I've never been into his horror stuff, but The Dark Tower series is amazing, and there are some books that connect to it (though usually just a character or location, no plot points are missed by skipping them).

The Stand is great, super long but the characters are well written and likeable. I think this might be the best book to start with.

Hearts In Atlantis is a good one, a collection of stories but all of them are very compelling. Very minimal supernatural elements, most of them are about life in the 50s/60s and the Vietnam War.

Salem's Lot is great, it's about vampires overtaking a town and the people trying to fight them.

Everything's Eventual is another collection of shorts, some of them are much better than others. The movie version of 1408 wasn't nearly as good as the story. Same for Riding the Bullet.

The Wind Through The Keyhole is a dark tower story, fits between books 4 and 5 but isn't necessary for the series. It was ok.

The Outsider led to me reading the Bill Hodges trilogy of Mr Mercedes, Finders Keepers, and End of Watch.

I really really enjoy his writing but he tends to botch the endings. Obviously I have no problem looking past that though.

Same. Even though I don't like Salem's Lot the ending was creepy and satisfying. Pet Sematary ended exactly as it should have. I love how by late in the book Rachel and Louis have changed places regarding their ability to cope with death, but it doesn't matter because everyone winds up dead or insane anyway.
