Play Village. You don't need to play the previous games to understand Village, especially considering Village continue's Ethan's story from 7.

Definitely try the remakes of 2 and 3, but you can play Village first. Village is a direct sequel to 7 so 7 is really the only one that is likely to be essential to have played prior.
