For those of you who worked/do work at a restaurant, how much earlier or later does the restaurant open/stay open for prep/cleanup?

For example, if the restaurants business hours are 11am to 10pm, do they start prepping for food service, getting deliveries, etc. at like 7am? Do they shut off the kitchen at 10pm, but actually go home at like midnight after cleaning up? Etc.

I was only in the closing shifts but if they were closing at 10pm then they would likely close the kitchen between 930-945 depending on how busy it was and if they thought anyone else would come in. Like on a Tuesday night it's safe to say no one is waltzing in at 959.

In any case there's cleanup that's going on well before closing. Like we'd close out half the cooking range for instance. Usually we never stayed longer than 1015 on a normal night but if it was a busy weekend with a lot of people coming late we might have to stay past 1030 or so.
