Theres really no fighting game franchises left to pull from. Mortal Kombat won't ever be in smash for rating reasons...what is left? Dead or Alive or Soul Calibur are definitely a step down in notoriety. King of Fighters is at least a classic, and Tekken is insanely successful.

If they wanted a Soul Calibur character too, I think they would've just added Yoshimitsu instead and had him pull from both series.

Saber(there is the whole "series started as an ero game" but it passed that point long ago)

Yeah I was mostly joking in the second part, but I did wonder why they're stopping the DLC packs since they seem to be popular as a whole. Sakurai wanting to do other things makes sense, but I thought Nintendo as a corporation would want to try and continue the DLC fighters until at least during the Switch's lifecycle.

Its just not how Nintendo operates. They could make a billion dollars selling more Mario Kart 8 DLC too, but they dont. They seem to prefer giving their games a definitive end rather than updating them in perpetuity.
