Instead we get like 5 seasons of students at year 1, and then maybe we'll get a time skip if we're lucky. Otherwise, the series just wraps up before the students are done.

It's an unnecessary storytelling restriction that really only works for Harry Potter due to its premise (in that the Harry Potter universe is fairly mundane when the kids aren't at or preparing to go to Hogwarts, at least until the last couple of books)

It's a nice way to actually progress your characters. Series have different seasons, movies, or books anyways so it's not like there isn't a clean cut way to do it. Writers just decide to drag out the first year for some reason, and then hastily write an ending where you don't get to see the characters develop into adults.
