Sure, but we don't have to use corn syrup to make it. We don't, though for at-home candy making, it's by far the easiest option available to add glucose to prevent crystallization. Simply adding straight glucose would be better (both in terms of effectiveness and nutritionally, since it's corn syrup's fructose content that's the main problem), but you usually have to go out of your way to find that, plus it's a real pain to work with. --- This is my signature. Speak for yourself, I have access to a multiple gallon tub of pure Dextrose. But can confirm making a 50% w/v solution takes plenty of time on a hot stir plate and slow addition to prevent crystallization.
