Ahh... man. I envy you guys.

I only had Sonic 2 on Sega Master System.
Of course, I loved that game to death.

But, it was all single player. With no chance to play as Tails.
And the zones were all different too.
Like, not a single zone from the Game Gear and Master System versions are in this poll. =(

Sonic 2 game gear's first two levels I think are pretty standard from what I remember, but its first boss is very tough.

I remember using the level skip code to actually play other levels since most of the time I couldn't beat the boss as a kid.

Yeah, the level itself wasn't difficult. I just had literally no idea how to beat the boss and I never found out.

Triple Trouble was where it's at on the Game Gear

The premise behind the boss is you just need to dodge 6 different balls, and the balls just kill the boss. The problem was the Game Gear's tiny screen made it hard to see them coming so they were tough to dodge. Also, there were no rings in the stage, so if just one hit you, you die. I agree that the design was poor and it took me awhile to even figure out what to do, since previous Sonic experience would suggest trying to attack the boss directly.

Since the three 2-player stages (Emerald Hill, Casino Night, Mystic Cave) have different music between the 1P and 2P versions, which of the two do you prefer for each individual case?

The 2P ones give me more nostalgia. But aside from that I'd say:
EH: 2p > 1p
CN: 1p = 2p
MC: 1p > 2p

Emerald Hill 2P is the song I have the most nostalgia for even though I'm certain I didn't hear it until I was a teenager. It just has that instant classic vibe to it.

Casino Night and Mystic Caves are good too, but I like the 1P for both more.

Aquatic Ruin is easily the best sonic 2 song to me which is honestly the main reason it's in my top 3 sonic zones haha (i like hilltop/wing fortress more for the environment). but also ancient ruins are cool and i like the colorfulness

This is the opposite for me. The 2p emerald hill music is beyond awful, and 1p emerald hill is one of the best songs in the game!

And 2p mystic cave is great imo

They used Mystic Cave 2P as the song for Hidden Palace in the 2013 mobile version. And falling down that spike pit in Mystic Cave is how you get there.
